Celery juice is sweeping the wellness world with it's proposed health benefits. So, should you jump on the celery juice bandwagon, too? Here’s everything you need to know about exactly what it is, the benefits behind it, and how to try it for yourself.
Celery, in its vegetable form, is incredibly healthy. It’s not only abundant in enzymes and antioxidants, but it’s also loaded with essential minerals and vitamins such as folate, potassium, vitamin B6, vitamin C, and vitamin K. Basically, a stalk of celery packs a nutritious punch. Another bonus? Celery juice is good at keeping you well-hydrated, as it’s mostly made up of water. There are claims it heals a multitude of dis-eases if 16 oz or more is taken on an empty stomach daily. Where's the science behind this? To be honest there is none. The Medical world does not endorsed most holistic cures for illnesses, however I can attest personally, for those I've tried I did cure what ailed me. From Hay fever to Asthma and Scleroderma I went the non tradition route and got fantastic results.
I currently began juicing celery and will post my findings...until then you can read here from Anthony William and make your own decision. http://www.medicalmedium.com/blog/celery-juice.

After Juicing celery for over 8 months I decided to stop. After 1 day I saw an increase in elimination - a good thing right?
After 1 week my skin was much clearer - another good thing.
Week 3 - elimination leveled out to normal
Week 4 - I felt good, but I felt pretty good prior to juicing celery
Week 6 and after - I began to develop extreme bloating and gas which is unusual for me as I am not affected in this way by any vegetables, juiced, raw or cooked.
I continued thinking it might be an adjustment or detox period however after 8 months the bloating and gas remained, even if I reduced my intake to 8 oz. I also began to notice I was becoming prone to water retention. 16 oz of celery juice contains 480 mg sodium, a lot for anyone as a daily source. I understand it's the sodium salts that are supposedly healing, however increasing my water consumption nor decreasing it alleviated the problem. It wasn't until I stopped juicing that I saw any relief.
So what was my conclusion after 8+ months drinking 16 oz fresh celery juice daily?
I'll pass...I'd rather eat celery and get the beneficial fiber..eat the whole rather that the part.
And as far as celery juice being the cure all? I leave this to you...but I find it difficult to believe that 1 source is a cure all for everyone. I do believe that if your diet is poor doing celery juice would certainly be of some benefit to get the digestion and detoxification process going. However for those already on a clean, healthy diet, I feel it unnecessary... although I see no reason to not incorporate it into the diet occasionally.
If any of you have experiences you'd like to share, I'd love to hear them.
